- 2 cans of salmon (14.75 ounces each), drained and bones removed
- 1/2 cup finely chopped onion
- 2 eggs, lightly beaten
- 1/2 cup oatmeal
- 1/4 cup cornmeal
- 1/2 teaspoon Creole seasoning (adjust according to your taste)
- 1/4 teaspoon garlic powder
- 1/4 teaspoon paprika
- Salt and pepper to taste
- Vegetable oil for frying
Instructions:
1. In a mixing bowl, flake the canned salmon with a fork. Make sure to remove any bones or skin.
2. Add the chopped onions, eggs, oatmeal, cornmeal, Creole seasoning, garlic powder, paprika, salt, and pepper to the bowl. Mix well until all the ingredients are combined.
3. Heat vegetable oil in a frying pan over medium heat.
4. Take a portion of the salmon mixture and shape it into a small patty or croquette. You can use your hands or a spoon for this step.
5. Carefully place the croquettes in the hot oil, leaving some space between them to ensure even cooking. Fry for about 3-4 minutes per side, or until golden brown and crispy.
6. Once cooked, remove the croquettes from the pan and place them on a paper towel-lined plate to drain any excess oil.
7. Repeat the process until all the salmon mixture is used, adding more oil to the pan as needed.
